| Simple Cuban Picadillo serves 4 2 cups of cooked rice 1 pound 80/20 ground beef 8 ounce can tomato sauce ½ cup of chopped red onion ½ cup pimiento stuffed olives, slice or whole ¼ cup raisins 1 chopped green bell pepper 1 Tablespoon apple cider vinegar 1 teaspoon olive oil ¼ teaspoon salt In a big non stick pan add the ground beef, salt, onions, and bell pepper. Stir and cook until ground beef is brown. Drain beef. Add the olive oil and stir. To beef mixture add raisins, olives, and tomato sauce. Cook and stir for 5 minutes. Add apple cider vinegar, stir. Remove from heat and serve of hot rice. |
